Keele Chefs Reveal Culinary Secrets

Keele Conferences & Events' award-winning chefs are set to share their culinary secrets in a new recipe book launching in the New Year.
The launch of ‘Taste: Keele - The Culinary Secrets' marks the end of the 40th anniversary year of Keele Conferences & Events, and has been complied by Executive Chef, Peter Walters and his team, who have cooked for the rich, the famous, and even the Royal family.
Food lovers can expect to find a selection of the team's best recipes in the book. Soups and starters include Pea Soup with Parmesan Marshmallow; Fishcake of Rainbow Trout on Asparagus Spears with Poached Quail Egg and Lemon and Dill Hollandaise; and Jerusalem Artichoke Soup. The mains range from Tartar of Butternut Squash & Roasted Shallots on Red and Yellow Pepper Coulis to Breast of Pheasant with Chicory. Desserts include mouth-watering White Chocolate and Rhubarb Chartreuse with Ginger Sorbet and a fruity Pineapple Alaska.
Speaking of the project, Peter Walters said: "We are delighted we are able to share our passion and love for food in this way. Our mission at Keele has always been to cook the best food and make sure our guests enjoy the experience.
"We have been fortunate over the years, to be involved in all types of catering and events and this book allows us to share some of our culinary secrets so that people can have a taste of Keele first- hand."
The launch of the new recipe book coincides with the revamp of the restaurant at Keele. The Terrace at Keele Hall, will officially re-open as a new smart business lunch venue on 10 January 2011.
